The design for Organum focuses on highlighting the existing beauty within Peter Gilmore’s dishes by working with multi layered glass reflections that accentuate the detail within his food presentation. This also explores the idea of ‘Organum’ being a combination of multiple elements that come together to form something unique. We celebrate the vision of Peter’s main suppliers, producers and growers by including very bold portrait and lifestyle photography which works to contrast the highly finished, vibrant aesthetic of his food and produce. Botanical illustration was then used to extend this concept by highlighting hero produce within each chapter.
